👩🍳 How to make Anchovy Lunch
- Clean anchovies (remove heads and guts if whole).
- Heat oil (170°C), add curry leaves and green chili (fry 20 sec).
- Add onion, cook 2 min until soft.
- Add turmeric and chili powder, stir 20 sec.
- Add anchovies, cook 3-4 min stirring gently until cooked through and slightly crispy. Visual cue: Anchovies cooked, slightly curled, aroma fishy but not overpowering.
- Add lemon juice and salt.
- Rinse lentil, add to boiling water, cook 12 min on medium heat until soft.
- Heat oil, add mustard seeds (crackle 15 sec), curry leaves (fry 15 sec).
- Add to lentil, stir. Add spices and salt.
- Place rice on plate.
- Serve anchovy preparation alongside.
- Add lentil curry on another section.
- Serve with lime pickle and pappadam.
