👩‍🍳 How to make Anchovy Lunch

  1. Clean anchovies (remove heads and guts if whole).
  2. Heat oil (170°C), add curry leaves and green chili (fry 20 sec).
  3. Add onion, cook 2 min until soft.
  4. Add turmeric and chili powder, stir 20 sec.
  5. Add anchovies, cook 3-4 min stirring gently until cooked through and slightly crispy. Visual cue: Anchovies cooked, slightly curled, aroma fishy but not overpowering.
  6. Add lemon juice and salt.
  7. Rinse lentil, add to boiling water, cook 12 min on medium heat until soft.
  8. Heat oil, add mustard seeds (crackle 15 sec), curry leaves (fry 15 sec).
  9. Add to lentil, stir. Add spices and salt.
  10. Place rice on plate.
  11. Serve anchovy preparation alongside.
  12. Add lentil curry on another section.
  13. Serve with lime pickle and pappadam.
