- Heat oil (160°C), add mustard seeds (crackle 10 sec).
- Add curry leaves, fry 15 sec.
- Add onion and green chili, cook 1 min.
- Add anchovy pieces, cook 1 min (should warm and soften slightly).
- Add chili powder, stir 10 sec.
- Add rice, toss for 1.5 min. Add salt. Visual cue: Anchovies distributed, rice grains separate, balanced fish aroma.
