👩‍🍳 How to make Yak Meat and Wild Green Curry

  1. Heat oil in heavy-bottomed pot to 75°C
  2. Add onion; fry 5-7 mins until golden brown (85°C)
  3. Add ginger, garlic; cook 2-3 mins until fragrant
  4. Add meat; cook 8-10 mins until all pieces browned on all sides (90°C)
  5. Add coriander, turmeric, garam masala; cook 1-2 mins
  6. Add tomatoes; cook 3-4 mins until broken down
  7. Pour in water; bring to simmer (90°C)
  8. Cover; reduce heat to low-medium
  9. Simmer for 30-35 mins until meat is very tender
  10. Stir in wild greens; cook 5-7 mins until wilted
  11. Optional: add chili powder for heat
  12. Season with salt and pepper
  13. Garnish with cilantro
  14. Serve hot (above 70°C)
