👩🍳 How to make Yak Meat and Wild Green Curry
- Heat oil in heavy-bottomed pot to 75°C
- Add onion; fry 5-7 mins until golden brown (85°C)
- Add ginger, garlic; cook 2-3 mins until fragrant
- Add meat; cook 8-10 mins until all pieces browned on all sides (90°C)
- Add coriander, turmeric, garam masala; cook 1-2 mins
- Add tomatoes; cook 3-4 mins until broken down
- Pour in water; bring to simmer (90°C)
- Cover; reduce heat to low-medium
- Simmer for 30-35 mins until meat is very tender
- Stir in wild greens; cook 5-7 mins until wilted
- Optional: add chili powder for heat
- Season with salt and pepper
- Garnish with cilantro
- Serve hot (above 70°C)
