👩🍳 How to make Yak Cheese Momos
- Make dough: mix flour, salt; add water and butter
- Knead 5-7 mins until smooth; rest 20 mins covered
- Divide into 14 equal balls
- Roll each to 3-4 inch circle
- Mix grated yak cheese with chives and pepper
- Place 1.5 tbsp filling in center of each circle
- Gather edges and pinch to seal (small pouch shape)
- Place seam-side down on bamboo steamer with parchment
- Steam over rolling boiling water (100°C) for 12-15 mins
- Momos should puff up and become slightly translucent
- Serve hot (above 60°C) with chili sauce on side
