👩‍🍳 How to make Yak Cheese Momos

  1. Make dough: mix flour, salt; add water and butter
  2. Knead 5-7 mins until smooth; rest 20 mins covered
  3. Divide into 14 equal balls
  4. Roll each to 3-4 inch circle
  5. Mix grated yak cheese with chives and pepper
  6. Place 1.5 tbsp filling in center of each circle
  7. Gather edges and pinch to seal (small pouch shape)
  8. Place seam-side down on bamboo steamer with parchment
  9. Steam over rolling boiling water (100°C) for 12-15 mins
  10. Momos should puff up and become slightly translucent
  11. Serve hot (above 60°C) with chili sauce on side
