- Rinse split peas; drain
- Heat butter in large pot to 65°C
- Add onion, ginger; fry 3-4 mins
- Add split peas; stir 1-2 mins
- Add turnips, carrots; stir 2 mins
- Pour water; bring to boil (100°C, 3 mins)
- Reduce heat; cover partially
- Simmer 40-45 mins
- Peas should break down, creating creamy base
- Vegetables should be very soft
- Season with salt and pepper
- Serve hot (above 65°C), garnished with cilantro
