  1. Rinse split peas; drain
  2. Heat butter in large pot to 65°C
  3. Add onion, ginger; fry 3-4 mins
  4. Add split peas; stir 1-2 mins
  5. Add turnips, carrots; stir 2 mins
  6. Pour water; bring to boil (100°C, 3 mins)
  7. Reduce heat; cover partially
  8. Simmer 40-45 mins
  9. Peas should break down, creating creamy base
  10. Vegetables should be very soft
  11. Season with salt and pepper
  12. Serve hot (above 65°C), garnished with cilantro
