  1. Heat butter in a non-stick pan to 70°C
  2. Add onion, green chili; fry 1-2 mins
  3. Add spinach; cook until wilted (2 mins, 75°C)
  4. Crumble paneer into pan; mix well
  5. Crack eggs into pan; break yolks
  6. Scramble for 2-3 mins until eggs begin to set
  7. Add turmeric, salt
  8. Continue cooking 1-2 mins until eggs are fully set but moist
  9. Serve immediately on warm plate
