👩‍🍳 How to make Skyu

  1. Make pasta: Mix flour with pinch salt; add water gradually to form soft dough
  2. Knead for 2-3 mins; let rest 10 mins covered
  3. Pinch off thumb-sized pieces (roughly ¾ inch); press with thumb to create thumb-pressed shapes
  4. Heat oil and butter in large pot to 70°C
  5. Add onion and green onion whites; fry 3-4 mins until golden (80°C)
  6. Add ginger; cook 1 min
  7. Add potatoes, turnips, carrots; stir 2-3 mins
  8. Add chopped tomato; cook 2-3 mins until softened
  9. Pour broth; bring to rolling boil (100°C, 5 mins)
  10. Add turmeric, garam masala, green chilies
  11. Carefully add thumb-pressed pasta pieces; stir gently
  12. Cover; reduce heat to medium-low
  13. Simmer for 15-20 mins until pasta floats and vegetables are tender
  14. Stir in milk; simmer another 3-4 mins
  15. Add green onion greens; season with salt and pepper
  16. Serve hot (above 70°C)
