👩🍳 How to make Skyu
- Make pasta: Mix flour with pinch salt; add water gradually to form soft dough
- Knead for 2-3 mins; let rest 10 mins covered
- Pinch off thumb-sized pieces (roughly ¾ inch); press with thumb to create thumb-pressed shapes
- Heat oil and butter in large pot to 70°C
- Add onion and green onion whites; fry 3-4 mins until golden (80°C)
- Add ginger; cook 1 min
- Add potatoes, turnips, carrots; stir 2-3 mins
- Add chopped tomato; cook 2-3 mins until softened
- Pour broth; bring to rolling boil (100°C, 5 mins)
- Add turmeric, garam masala, green chilies
- Carefully add thumb-pressed pasta pieces; stir gently
- Cover; reduce heat to medium-low
- Simmer for 15-20 mins until pasta floats and vegetables are tender
- Stir in milk; simmer another 3-4 mins
- Add green onion greens; season with salt and pepper
- Serve hot (above 70°C)
