- Place meat and bone in large pot
- Pour water; bring to rolling boil (100°C, 2 mins)
- Skim any foam that rises (3-5 mins)
- Add onion, ginger, garlic, bay leaves, peppercorns
- Reduce heat to low; cover partially
- Simmer gently for 45-50 mins
- Meat should be very tender
- Strain broth if desired (optional)
- Keep meat pieces in broth or strain out
- Add salt to taste
- Serve hot (above 70°C), garnished with cilantro
