  1. Place meat and bone in large pot
  2. Pour water; bring to rolling boil (100°C, 2 mins)
  3. Skim any foam that rises (3-5 mins)
  4. Add onion, ginger, garlic, bay leaves, peppercorns
  5. Reduce heat to low; cover partially
  6. Simmer gently for 45-50 mins
  7. Meat should be very tender
  8. Strain broth if desired (optional)
  9. Keep meat pieces in broth or strain out
  10. Add salt to taste
  11. Serve hot (above 70°C), garnished with cilantro
