👩🍳 How to make Root Vegetable and Lentil Soup
- Rinse lentils; drain
- Heat butter in pot to 65°C
- Add onion, ginger; fry 3 mins until soft
- Add diced root vegetables; stir 2-3 mins
- Add lentils; stir 1 min
- Pour broth; add turmeric; bring to boil (100°C, 3 mins)
- Add cumin; reduce heat to medium
- Simmer covered for 18-20 mins
- Stir occasionally; vegetables should be very soft
- Lentils should almost dissolve, thickening soup
- Season with salt and pepper
- Simmer another 2-3 mins
- Garnish with cilantro
- Serve hot (above 65°C)
