👩‍🍳 How to make Root Vegetable and Lentil Soup

  1. Rinse lentils; drain
  2. Heat butter in pot to 65°C
  3. Add onion, ginger; fry 3 mins until soft
  4. Add diced root vegetables; stir 2-3 mins
  5. Add lentils; stir 1 min
  6. Pour broth; add turmeric; bring to boil (100°C, 3 mins)
  7. Add cumin; reduce heat to medium
  8. Simmer covered for 18-20 mins
  9. Stir occasionally; vegetables should be very soft
  10. Lentils should almost dissolve, thickening soup
  11. Season with salt and pepper
  12. Simmer another 2-3 mins
  13. Garnish with cilantro
  14. Serve hot (above 65°C)
