- Roast vegetables: toss diced vegetables with 1 tbsp butter, salt; roast at 200°C for 25-30 mins until caramelized
- Cook barley: simmer ¼ cup raw barley in 1 cup water for 25-30 mins until tender
- Top with roasted vegetables
- Drizzle with melted butter
- Sprinkle cumin and turmeric
- Toss gently; season with salt and pepper
- Scatter roasted nuts on top
- Garnish with cilantro
- Serve warm (above 55°C)
