  1. Roast vegetables: toss diced vegetables with 1 tbsp butter, salt; roast at 200°C for 25-30 mins until caramelized
  2. Cook barley: simmer ¼ cup raw barley in 1 cup water for 25-30 mins until tender
  3. Top with roasted vegetables
  4. Drizzle with melted butter
  5. Sprinkle cumin and turmeric
  6. Toss gently; season with salt and pepper
  7. Scatter roasted nuts on top
  8. Garnish with cilantro
  9. Serve warm (above 55°C)
