👩‍🍳 How to make Roasted Turnip and Barley Pilau

  1. Roast turnips: toss diced turnips with ½ tbsp butter, salt; roast at 200°C for 15-18 mins until caramelized
  2. Heat remaining butter in heavy pot to 65°C
  3. Add cumin seeds; sizzle 30 seconds
  4. Add onion; fry 3-4 mins until golden
  5. Add ginger; cook 1 min
  6. Add barley; stir 1-2 mins
  7. Pour broth; bring to boil (100°C, 3 mins)
  8. Reduce heat to very low; cover
  9. Cook 22-25 mins until barley tender and liquid absorbed
  10. Do not stir during cooking
  11. Fold in roasted turnips gently
  12. Let rest 3-5 mins
  13. Fluff with fork
  14. Season with salt and pepper
  15. Garnish with cilantro
  16. Serve warm (above 55°C)
