👩🍳 How to make Roasted Turnip and Barley Pilau
- Roast turnips: toss diced turnips with ½ tbsp butter, salt; roast at 200°C for 15-18 mins until caramelized
- Heat remaining butter in heavy pot to 65°C
- Add cumin seeds; sizzle 30 seconds
- Add onion; fry 3-4 mins until golden
- Add ginger; cook 1 min
- Add barley; stir 1-2 mins
- Pour broth; bring to boil (100°C, 3 mins)
- Reduce heat to very low; cover
- Cook 22-25 mins until barley tender and liquid absorbed
- Do not stir during cooking
- Fold in roasted turnips gently
- Let rest 3-5 mins
- Fluff with fork
- Season with salt and pepper
- Garnish with cilantro
- Serve warm (above 55°C)
