👩‍🍳 How to make Roasted Beet and Barley Salad

  1. Roast beets: wrap in foil, roast at 200°C for 40-50 mins until tender
  2. Cool slightly; peel; dice into ½ inch cubes
  3. Cook barley: simmer ⅓ cup raw barley in 1 cup water for 25-30 mins until tender
  4. While warm, combine barley and roasted beets
  5. Drizzle melted butter and vinegar
  6. Sprinkle cumin, salt, pepper
  7. Toss gently
  8. Top with roasted walnuts
  9. Garnish with cilantro
  10. Serve warm (above 55°C)
