👩‍🍳 How to make Pumpkin and Barley Pudding

  1. Heat butter in heavy pot to 60°C
  2. Add barley flour slowly, stirring constantly
  3. Cook for 3-4 mins, stirring frequently, until light golden
  4. Heat milk separately to 65°C
  5. Gradually pour warm milk into toasted flour, stirring to avoid lumps
  6. Cook on low heat for 5-6 mins
  7. Add pumpkin puree, jaggery, salt
  8. Stir until jaggery dissolved
  9. Add cardamom and nutmeg
  10. Cook another 3-4 mins until pudding is thick and glossy
  11. Pour into bowls
  12. Top with sliced almonds
  13. Serve warm (55-60°C)
