👩🍳 How to make Pumpkin and Barley Pudding
- Heat butter in heavy pot to 60°C
- Add barley flour slowly, stirring constantly
- Cook for 3-4 mins, stirring frequently, until light golden
- Heat milk separately to 65°C
- Gradually pour warm milk into toasted flour, stirring to avoid lumps
- Cook on low heat for 5-6 mins
- Add pumpkin puree, jaggery, salt
- Stir until jaggery dissolved
- Add cardamom and nutmeg
- Cook another 3-4 mins until pudding is thick and glossy
- Pour into bowls
- Top with sliced almonds
- Serve warm (55-60°C)
