👩‍🍳 How to make Mushroom and Barley Soup

  1. Heat butter in pot to 65°C
  2. Add onion; fry 3 mins
  3. Add mushrooms; cook 4 mins until releasing moisture (75°C)
  4. Add ginger; cook 1 min
  5. Add barley; stir 1-2 mins
  6. Pour broth; add bay leaf and thyme
  7. Bring to rolling boil (100°C, 3 mins)
  8. Reduce heat; simmer covered for 28-30 mins
  9. Barley should be tender
  10. Remove bay leaf
  11. Season with salt and pepper
  12. Serve hot (above 65°C), garnished with cilantro
