👩🍳 How to make Mushroom and Barley Soup
- Heat butter in pot to 65°C
- Add onion; fry 3 mins
- Add mushrooms; cook 4 mins until releasing moisture (75°C)
- Add ginger; cook 1 min
- Add barley; stir 1-2 mins
- Pour broth; add bay leaf and thyme
- Bring to rolling boil (100°C, 3 mins)
- Reduce heat; simmer covered for 28-30 mins
- Barley should be tender
- Remove bay leaf
- Season with salt and pepper
- Serve hot (above 65°C), garnished with cilantro
