👩‍🍳 How to make Mung Bean and Barley Khichdi

  1. Rinse mung dal and barley separately; drain
  2. Heat butter and oil in heavy pot to 65°C
  3. Add cumin seeds; sizzle 30 seconds
  4. Add onion, ginger; fry 2-3 mins
  5. Add mung dal and barley; stir 1-2 mins
  6. Add turmeric, green chili
  7. Pour water; bring to boil (100°C, 3 mins)
  8. Reduce heat to medium-low; cover
  9. Simmer for 20-25 mins
  10. Stir occasionally; mixture should become thick and creamy
  11. Dal and barley should be completely soft
  12. Season with salt
  13. Garnish with cilantro
  14. Serve warm (above 55°C)
