👩🍳 How to make Mung Bean and Barley Khichdi
- Rinse mung dal and barley separately; drain
- Heat butter and oil in heavy pot to 65°C
- Add cumin seeds; sizzle 30 seconds
- Add onion, ginger; fry 2-3 mins
- Add mung dal and barley; stir 1-2 mins
- Add turmeric, green chili
- Pour water; bring to boil (100°C, 3 mins)
- Reduce heat to medium-low; cover
- Simmer for 20-25 mins
- Stir occasionally; mixture should become thick and creamy
- Dal and barley should be completely soft
- Season with salt
- Garnish with cilantro
- Serve warm (above 55°C)
