👩🍳 How to make Mung Bean and Barley Kedgeree
- Rinse mung beans and barley; drain
- Heat butter in pot to 65°C
- Add cumin seeds; sizzle for 30 seconds
- Add onion; fry 2 mins
- Add mung beans and barley; stir for 1-2 mins
- Pour water; add turmeric; bring to boil (100°C, 3 mins)
- Reduce heat to low-medium; cover
- Cook for 20-25 mins until beans and barley are very soft
- Stir occasionally; mixture should become thick and creamy
- Season with salt
- Serve hot (above 60°C)
