👩‍🍳 How to make Momos with Yak Meat

  1. *Dough:*
  2. Mix flour and salt; make well
  3. Pour water gradually; knead for 5-7 mins until smooth
  4. Knead in butter; cover with damp cloth
  5. Rest 20-30 mins
  6. *Filling:*
  7. Combine ground meat, onions, cilantro, green onions, ginger, cumin
  8. Season with salt and pepper; mix well
  9. *Assembly:*
  10. Divide dough into 16-18 equal balls
  11. Roll each to 3-4 inch circle
  12. Place 1 tbsp filling in center
  13. Gather edges; pinch to seal (should resemble small pouch)
  14. Place seam-side down on steamer lined with parchment
  15. *Cooking:*
  16. Bring water to rolling boil in steamer pot (100°C)
  17. Place basket over water (not touching)
  18. Steam momos 12-15 mins until slightly translucent
  19. Meanwhile, prepare sauce: heat oil; add onion, cook 2 mins
  20. Add tomatoes, green chilies; cook 5-7 mins until broken down
  21. Season with salt
  22. Serve hot momos (above 60°C)
  23. Serve chili-tomato sauce on side for dipping
