- *Dough:*
- Mix flour and salt
- Make well; pour warm water gradually
- Knead for 5-7 mins until smooth (don't overwork)
- Rub butter on surface; cover with damp cloth
- Rest 20-30 mins (around 25°C)
- *Filling:*
- Combine grated yak cheese, chives, cumin, salt, pepper in bowl
- *Assembly:*
- Divide dough into 12 equal balls
- Roll each to 3-4 inch circle (thin but not transparent)
