👩‍🍳 How to make Momo with Yak Cheese Filling

  1. *Dough:*
  2. Mix flour and salt
  3. Make well; pour warm water gradually
  4. Knead for 5-7 mins until smooth (don't overwork)
  5. Rub butter on surface; cover with damp cloth
  6. Rest 20-30 mins (around 25°C)
  7. *Filling:*
  8. Combine grated yak cheese, chives, cumin, salt, pepper in bowl
  9. *Assembly:*
  10. Divide dough into 12 equal balls
  11. Roll each to 3-4 inch circle (thin but not transparent)
  12. Place 1 tbsp filling in center
  13. Gather edges to center; pinch to seal (should resemble small purse)
  14. Place seam-side down on bamboo steamer lined with parchment
  15. *Cooking:*
  16. Fill steamer pot with water; bring to rolling boil (100°C)
  17. Place steamer basket over water (should not touch)
  18. Steam momos for 10-12 mins until dough becomes slightly translucent
  19. Serve hot (above 60°C)
