  1. Heat oil in large pot to 75°C
  2. Add onion; fry 4-5 mins until golden (75°C)
  3. Add ginger; cook 1-2 mins
  4. Add meat; cook 8-10 mins until browned
  5. Add potatoes; stir 2 mins
  6. Pour water; add green chilies
  7. Bring to simmer (90°C)
  8. Cover; reduce heat to low-medium
  9. Cook 30-35 mins
  10. Meat should be very tender
  11. Potatoes should be soft
  12. Season with salt and pepper
  13. Simmer final 2-3 mins
  14. Serve hot (above 70°C), garnished with cilantro
