- Heat oil in large pot to 75°C
- Add onion; fry 4-5 mins until golden (75°C)
- Add ginger; cook 1-2 mins
- Add meat; cook 8-10 mins until browned
- Add potatoes; stir 2 mins
- Pour water; add green chilies
- Bring to simmer (90°C)
- Cover; reduce heat to low-medium
- Cook 30-35 mins
- Meat should be very tender
- Potatoes should be soft
- Season with salt and pepper
- Simmer final 2-3 mins
- Serve hot (above 70°C), garnished with cilantro
