👩🍳 How to make Lentil and Vegetable Dal with Khambir
- Rinse lentils; drain
- Heat oil in large pot to 65°C
- Add cumin seeds; sizzle 30 seconds
- Add onion, ginger, garlic; fry 3-4 mins until golden (75°C)
- Add lentils; stir 1-2 mins
- Pour water; bring to boil (100°C, 3 mins)
- Add turmeric; reduce heat to medium
- Simmer partially covered for 15-18 mins
- Add tomatoes, carrots; cook 5 mins
- Add spinach; cook 3-4 mins until wilted
- Add garam masala
- Simmer another 2-3 mins until lentils are very soft and dal is thick
- Season with salt and pepper
- Stir in cilantro
- Serve hot (above 65°C) alongside warm khambir bread
