👩‍🍳 How to make Lentil and Vegetable Dal with Khambir

  1. Rinse lentils; drain
  2. Heat oil in large pot to 65°C
  3. Add cumin seeds; sizzle 30 seconds
  4. Add onion, ginger, garlic; fry 3-4 mins until golden (75°C)
  5. Add lentils; stir 1-2 mins
  6. Pour water; bring to boil (100°C, 3 mins)
  7. Add turmeric; reduce heat to medium
  8. Simmer partially covered for 15-18 mins
  9. Add tomatoes, carrots; cook 5 mins
  10. Add spinach; cook 3-4 mins until wilted
  11. Add garam masala
  12. Simmer another 2-3 mins until lentils are very soft and dal is thick
  13. Season with salt and pepper
  14. Stir in cilantro
  15. Serve hot (above 65°C) alongside warm khambir bread
