  1. Slice meat very thin against the grain
  2. Mix with salt, turmeric, coriander, ginger, garlic
  3. Let marinate 30 mins
  4. Heat thin layer of oil in wide pan to 80°C
  5. Arrange meat strips single layer
  6. Fry 3-4 mins per side until completely dried out and crispy
  7. Meat should be brittle, not chewy
  8. Drain on cloth
  9. Store in airtight container
