- Slice meat very thin against the grain
- Mix with salt, turmeric, coriander, ginger, garlic
- Let marinate 30 mins
- Heat thin layer of oil in wide pan to 80°C
- Arrange meat strips single layer
- Fry 3-4 mins per side until completely dried out and crispy
- Meat should be brittle, not chewy
- Drain on cloth
- Store in airtight container
