  1. Heat butter in large pot to 65°C
  2. Add onion, ginger; fry 3 mins
  3. Add barley; stir 1-2 mins
  4. Pour broth; bring to rolling boil (100°C, 3 mins)
  5. Reduce heat; cover partially; simmer 25-28 mins
  6. Barley should be very soft
  7. Add fresh greens; cook 5-7 mins until wilted
  8. Stir in milk; simmer gently 2-3 mins
  9. Season with salt and pepper
  10. Serve hot (above 65°C), garnished with cilantro
