- Heat butter in large pot to 65°C
- Add onion, ginger; fry 3 mins
- Add barley; stir 1-2 mins
- Pour broth; bring to rolling boil (100°C, 3 mins)
- Reduce heat; cover partially; simmer 25-28 mins
- Barley should be very soft
- Add fresh greens; cook 5-7 mins until wilted
- Stir in milk; simmer gently 2-3 mins
- Season with salt and pepper
- Serve hot (above 65°C), garnished with cilantro
