👩‍🍳 How to make Chutagi with Lamb

  1. *Pasta:*
  2. Mix flour with ¼ tsp salt; add water to form tight dough
  3. Knead until smooth (5-7 mins); rest 15 mins under damp cloth
  4. Roll to 1-2 cm thickness
  5. Cut circles with small cookie cutter (about 1.5 inch diameter)
  6. Shape each circle into "ear" by rolling edges together and pressing center
  7. *Broth:*
  8. Heat oil in pot to 70°C
  9. Add onion; fry 5-7 mins until golden (80°C)
  10. Add ginger; cook 1 min
  11. Add diced meat; cook 5-10 mins until browned (85°C)
  12. Add coriander, cumin, garam masala, turmeric, meat masala
  13. Cook spices 1-2 mins until fragrant
  14. Add chopped tomato; cook 2-3 mins
  15. Pour broth; bring to simmer (90°C)
  16. Add potatoes; cook 10 mins
  17. Add cauliflower and peas; cook 5 mins
  18. Carefully add pasta ears; cook 10-15 mins until tender
  19. Season with salt
  20. Serve hot (above 70°C), garnished with fresh coriander
