👩🍳 How to make Chutagi with Lamb
- *Pasta:*
- Mix flour with ¼ tsp salt; add water to form tight dough
- Knead until smooth (5-7 mins); rest 15 mins under damp cloth
- Roll to 1-2 cm thickness
- Cut circles with small cookie cutter (about 1.5 inch diameter)
- Shape each circle into "ear" by rolling edges together and pressing center
- *Broth:*
- Heat oil in pot to 70°C
- Add onion; fry 5-7 mins until golden (80°C)
- Add ginger; cook 1 min
- Add diced meat; cook 5-10 mins until browned (85°C)
- Add coriander, cumin, garam masala, turmeric, meat masala
- Cook spices 1-2 mins until fragrant
- Add chopped tomato; cook 2-3 mins
- Pour broth; bring to simmer (90°C)
- Add potatoes; cook 10 mins
- Add cauliflower and peas; cook 5 mins
- Carefully add pasta ears; cook 10-15 mins until tender
- Season with salt
- Serve hot (above 70°C), garnished with fresh coriander
