👩‍🍳 How to make Chickpea and Spinach Curry

  1. Heat butter and oil in pot to 70°C
  2. Add onion; fry 3-4 mins until golden
  3. Add ginger, garlic; cook 1-2 mins until fragrant
  4. Add turmeric, garam masala, coriander; cook 1 min
  5. Add tomatoes; cook 2-3 mins
  6. Add chickpeas; stir gently
  7. Pour water; bring to simmer (90°C)
  8. Cook covered for 10 mins for flavors to blend
  9. Stir in spinach; cook 5-7 mins until completely wilted
  10. Season with salt and pepper
  11. Simmer another 2-3 mins
  12. Garnish with cilantro
  13. Serve hot (above 65°C)
