👩🍳 How to make Chickpea and Spinach Curry
- Heat butter and oil in pot to 70°C
- Add onion; fry 3-4 mins until golden
- Add ginger, garlic; cook 1-2 mins until fragrant
- Add turmeric, garam masala, coriander; cook 1 min
- Add tomatoes; cook 2-3 mins
- Add chickpeas; stir gently
- Pour water; bring to simmer (90°C)
- Cook covered for 10 mins for flavors to blend
- Stir in spinach; cook 5-7 mins until completely wilted
- Season with salt and pepper
- Simmer another 2-3 mins
- Garnish with cilantro
- Serve hot (above 65°C)
