👩🍳 How to make Barley Pudding with Honey and Nuts
- Toast barley flour in dry pan for 3-4 mins at 55°C until fragrant but not brown
- Heat milk separately to 70°C (do not boil)
- Slowly sprinkle toasted flour into hot milk, stirring constantly to avoid lumps
- Cook on low heat for 5-6 mins, stirring frequently
- Add butter, salt, and cardamom powder
- Cook another 2-3 mins until pudding thickens
- Add honey once mixture cools slightly below 60°C
- Top with crushed roasted nuts
- Serve warm (55-60°C)
