👩‍🍳 How to make Barley Milk Pudding

  1. Heat butter in a heavy-bottomed pot over low-medium heat (55°C)
  2. Add barley flour slowly, stirring constantly to avoid lumps
  3. Toast flour gently for 3-4 mins until fragrant (70-75°C), stirring frequently
  4. Warm milk separately to 65°C (do not boil)
  5. Gradually pour warm milk into toasted flour, stirring continuously
  6. Add salt, cardamom powder
  7. Cook on low heat for 8-10 mins, stirring frequently
  8. Stir in honey once slightly cooled to 60°C (to preserve enzymes)
  9. If using nuts, sprinkle on top
  10. Serve warm (55-60°C)
