👩🍳 How to make Barley Milk Pudding
- Heat butter in a heavy-bottomed pot over low-medium heat (55°C)
- Add barley flour slowly, stirring constantly to avoid lumps
- Toast flour gently for 3-4 mins until fragrant (70-75°C), stirring frequently
- Warm milk separately to 65°C (do not boil)
- Gradually pour warm milk into toasted flour, stirring continuously
- Add salt, cardamom powder
- Cook on low heat for 8-10 mins, stirring frequently
- Stir in honey once slightly cooled to 60°C (to preserve enzymes)
- If using nuts, sprinkle on top
- Serve warm (55-60°C)
