👩🍳 How to make Barley Halwa
- Heat butter in heavy-bottomed pot to 65°C
- Add barley flour slowly, stirring constantly
- Cook for 4-5 mins on low heat, stirring frequently
- Flour should turn golden brown but not dark
- Heat milk separately to 70°C
- Gradually pour warm milk into roasted flour, stirring to avoid lumps
- Cook on low heat for 6-8 mins
- Add jaggery, salt; cook until dissolved
- Add dried fruits and nuts
- Add cardamom
- Cook another 2-3 mins until halwa is thick and glossy
- Serve warm (60-65°C)
