👩‍🍳 How to make Barley Flour Payasam

  1. Toast barley flour in dry pan 3-4 mins at 55°C; cool
  2. Heat butter in heavy pot to 60°C
  3. Add toasted barley flour; stir constantly for 2-3 mins
  4. Gradually add water and then milk, stirring to avoid lumps
  5. Cook on low heat for 6-8 mins, stirring frequently
  6. Payasam should thicken to pudding consistency
  7. Add jaggery; stir until dissolved
  8. Add cardamom and salt
  9. Fold in cashews and raisins
  10. Simmer another 1-2 mins
  11. Serve warm (55-60°C)
