👩🍳 How to make Barley Flour Payasam
- Toast barley flour in dry pan 3-4 mins at 55°C; cool
- Heat butter in heavy pot to 60°C
- Add toasted barley flour; stir constantly for 2-3 mins
- Gradually add water and then milk, stirring to avoid lumps
- Cook on low heat for 6-8 mins, stirring frequently
- Payasam should thicken to pudding consistency
- Add jaggery; stir until dissolved
- Add cardamom and salt
- Fold in cashews and raisins
- Simmer another 1-2 mins
- Serve warm (55-60°C)
