  1. Heat broth and keep at gentle simmer (75-80°C) throughout cooking
  2. Heat butter in heavy pot to 65°C
  3. Add onion; fry 3-4 mins until soft
  4. Add barley; stir constantly for 2-3 mins
  5. Add turmeric; stir well
  6. Add hot broth one ladle at a time (about ¾ cup)
  7. Stir frequently until broth absorbed (about 3-4 mins each)
  8. Continue adding broth gradually, stirring, until barley is tender (25-30 mins total)
  9. When barley is almost cooked, stir in mixed vegetables
  10. Cook final 3-4 mins until vegetables are tender
  11. If using yak cheese, fold in gently
  12. Season with salt and pepper
  13. Garnish with cilantro
  14. Serve warm (above 55°C)
