- Heat broth and keep at gentle simmer (75-80°C) throughout cooking
- Heat butter in heavy pot to 65°C
- Add onion; fry 3-4 mins until soft
- Add barley; stir constantly for 2-3 mins
- Add turmeric; stir well
- Add hot broth one ladle at a time (about ¾ cup)
- Stir frequently until broth absorbed (about 3-4 mins each)
- Continue adding broth gradually, stirring, until barley is tender (25-30 mins total)
- When barley is almost cooked, stir in mixed vegetables
- Cook final 3-4 mins until vegetables are tender
- If using yak cheese, fold in gently
- Season with salt and pepper
- Garnish with cilantro
- Serve warm (above 55°C)
