👩🍳 How to make Barley and Mushroom Pilau
- Heat butter and oil in heavy pot to 65°C
- Add cumin seeds; sizzle 30 seconds
- Add cardamom pods, bay leaf; cook 30 seconds
- Add onion; fry 3-4 mins until light golden (70°C)
- Add ginger; cook 1 min
- Add mushrooms; stir-fry 3-4 mins until they release moisture (75°C)
- Add barley; stir 1-2 mins
- Add turmeric
- Pour broth; bring to rolling boil (100°C, 3 mins)
- Reduce heat to very low; cover with tight lid
- Cook for 25-30 mins until barley is tender and liquid absorbed
- Do not stir during cooking (keeps grains separate)
- Remove from heat; let rest 5 mins covered
- Fluff gently with fork
- Season with salt and pepper
- Garnish with cilantro
- Serve warm (above 55°C)
