👩‍🍳 How to make Barley and Mushroom Pilau

  1. Heat butter and oil in heavy pot to 65°C
  2. Add cumin seeds; sizzle 30 seconds
  3. Add cardamom pods, bay leaf; cook 30 seconds
  4. Add onion; fry 3-4 mins until light golden (70°C)
  5. Add ginger; cook 1 min
  6. Add mushrooms; stir-fry 3-4 mins until they release moisture (75°C)
  7. Add barley; stir 1-2 mins
  8. Add turmeric
  9. Pour broth; bring to rolling boil (100°C, 3 mins)
  10. Reduce heat to very low; cover with tight lid
  11. Cook for 25-30 mins until barley is tender and liquid absorbed
  12. Do not stir during cooking (keeps grains separate)
  13. Remove from heat; let rest 5 mins covered
  14. Fluff gently with fork
  15. Season with salt and pepper
  16. Garnish with cilantro
  17. Serve warm (above 55°C)
