- Heat butter in large pot to 65°C
- Add onion, ginger; fry 3-4 mins
- Add mushrooms; cook 3-4 mins until releasing moisture
- Add barley; stir 1-2 mins
- Pour broth; bring to boil (100°C, 3 mins)
- Reduce heat; cover partially
- Simmer 28-30 mins
- Barley should be tender
- Mushrooms soft and integrated
- Season with salt and pepper
- Serve hot (above 65°C), garnished with cilantro
