  1. Heat butter in large pot to 65°C
  2. Add onion, ginger; fry 3-4 mins
  3. Add mushrooms; cook 3-4 mins until releasing moisture
  4. Add barley; stir 1-2 mins
  5. Pour broth; bring to boil (100°C, 3 mins)
  6. Reduce heat; cover partially
  7. Simmer 28-30 mins
  8. Barley should be tender
  9. Mushrooms soft and integrated
  10. Season with salt and pepper
  11. Serve hot (above 65°C), garnished with cilantro
