- Toast barley grains in dry pan 3-4 mins at 60°C; cool
- Heat ghee in heavy-bottomed pan to 55°C
- Add jaggery; heat gently while stirring
- When jaggery dissolves and temperature reaches 110°C (softball stage), mixture will change color slightly
- Add roasted barley, cardamom, salt
- Mix quickly but thoroughly
- Add peanuts
- Pour onto oiled parchment paper
- Cool completely; break into pieces
