  1. Toast barley grains in dry pan 3-4 mins at 60°C; cool
  2. Heat ghee in heavy-bottomed pan to 55°C
  3. Add jaggery; heat gently while stirring
  4. When jaggery dissolves and temperature reaches 110°C (softball stage), mixture will change color slightly
  5. Add roasted barley, cardamom, salt
  6. Mix quickly but thoroughly
  7. Add peanuts
  8. Pour onto oiled parchment paper
  9. Cool completely; break into pieces
