- Heat butter in heavy pan to 50°C
- Add barley flour; toast gently 2-3 mins, stirring constantly
- Do not brown
- Remove from heat
- Stir in honey until well combined
- Add walnuts, salt, cardamom
- Line 8x8 inch pan with parchment
- Press mixture evenly into pan
- Cool completely
- Cut into 1-inch squares
- Store in airtight container
