  1. Heat butter in heavy pan to 50°C
  2. Add barley flour; toast gently 2-3 mins, stirring constantly
  3. Do not brown
  4. Remove from heat
  5. Stir in honey until well combined
  6. Add walnuts, salt, cardamom
  7. Line 8x8 inch pan with parchment
  8. Press mixture evenly into pan
  9. Cool completely
  10. Cut into 1-inch squares
  11. Store in airtight container
