- Roast apricot kernels in dry pan 3-4 mins at 65°C until fragrant; cool and chop roughly
- Heat ghee in heavy-bottomed pan to 55°C
- Add jaggery; heat gently, stirring constantly
- When jaggery dissolves and reaches 110°C (softball stage), add apricot pieces
- Add cardamom and salt; mix quickly
- Pour onto oiled parchment paper
- Cool completely; break into pieces
