  1. Roast apricot kernels in dry pan 3-4 mins at 65°C until fragrant; cool and chop roughly
  2. Heat ghee in heavy-bottomed pan to 55°C
  3. Add jaggery; heat gently, stirring constantly
  4. When jaggery dissolves and reaches 110°C (softball stage), add apricot pieces
  5. Add cardamom and salt; mix quickly
  6. Pour onto oiled parchment paper
  7. Cool completely; break into pieces
