- Soak apricots in water for 30 mins
- Place apricots with soaking water in pot
- Bring to simmer (90°C, 5-7 mins)
- Mash apricots with back of spoon until jam-like
- Add honey, butter, salt
- Cook on low heat for 8-10 mins until jam is thick and glossy
- Test consistency: should reach 105°C when ready
- Cool slightly
- Top with crushed nuts if desired
- Serve warm or at room temperature
