  1. Soak apricots in water for 30 mins
  2. Place apricots with soaking water in pot
  3. Bring to simmer (90°C, 5-7 mins)
  4. Mash apricots with back of spoon until jam-like
  5. Add honey, butter, salt
  6. Cook on low heat for 8-10 mins until jam is thick and glossy
  7. Test consistency: should reach 105°C when ready
  8. Cool slightly
  9. Top with crushed nuts if desired
  10. Serve warm or at room temperature
