  1. Prepare filling (2 mins, no heat): Mix grated jaggery with 1/4 cup grated coconut and cardamom powder. Keep aside.
  2. Mix dough (2 mins, no heat): Mix rice flour, remaining coconut, salt, 1.5 tbsp ghee, 3-4 tbsp water. Knead to smooth, firm dough.
  3. Oil mold (1 min, no heat): Oil cylindrical puttu mold. Layer dough and jaggery filling alternately, pressing gently. Start and end with dough.
  4. Steam (8-10 mins, medium-high heat): Place mold vertically in steamer. Steam covered until cooked. Visual: mold hot to touch, steam stops coming out.
  5. Release (2 mins, no heat): Push puttu out using plunger onto plate. Serve warm.
