  1. Prepare batter (2 mins, no heat): Mix besan, rice flour, salt, turmeric, red chili powder. Add water gradually to form thick, coating batter. Visual: batter thick, sticks to vegetables.
  2. Add aromatics (1 min, no heat): Mix in green chilies, ginger.
  3. Coat vegetables (2 mins, no heat): Add cut vegetables to batter, coat well. Visual: each piece well-coated.
  4. Heat oil (3 mins, high heat): Heat coconut oil in deep pan to 170°C.
