👩🍳 How to make Vegetable Biryani
- Fry onions (7 mins, high heat): Heat 2 tbsp oil, fry onion slices until dark brown and crispy. Remove most, reserve 2 tbsp for topping.
- Fry nuts (2 mins, high heat): In remaining oil, fry cashews until golden. Remove. Fry raisins 30 seconds. Remove.
- Layer (3 mins, no heat): In heavy pot, layer: half rice, all vegetable mixture, remaining rice. Top with reserved onions, fried nuts.
- Bake (20 mins, medium heat): Cover tightly with foil and lid. Cook on low heat 20 minutes. Do NOT open.
- Rest (5 mins, no heat): Let rest covered 5 minutes.
