  1. Temper oil (1 min, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves. Visual: seeds pop.

  3. Finish (8 mins, low heat): Add coconut milk, slit green chilies. Simmer gently until squid is very tender. Do NOT overcook or squid becomes tough. Visual: creamy sauce, squid very tender.
  4. Check seasoning (1 min, low heat): Adjust salt if needed.
