  1. Marinate shrimp (10 mins): Toss shrimp with 1 tbsp ginger-garlic paste, 1/2 tbsp Kashmiri chili powder, 1/4 tsp turmeric, salt, and 1 tbsp lime juice. Let sit for 10 minutes.
  2. Prepare sambal base (2 mins): Mix remaining Kashmiri chili powder, coriander powder, black pepper powder, turmeric with 2 tbsp water to form smooth paste. Add chopped onion, remaining ginger-garlic paste, minced green chilies, minced curry leaves.
  3. Heat oil (1 min, medium heat): Heat coconut oil in pan.
  4. Fry sambal base (2 mins, medium heat): Add sambal paste to oil, fry for 1-2 minutes until aromatic and oils separate from spices.
  5. Final cook (2 mins, medium-low heat): Continue cooking, stirring occasionally, until sambal darkens and develops caramelized spots. Do not overcook shrimp.
  6. Finish (1 min, low heat): Turn off heat. Drizzle remaining lime juice. Sambal should be thick, spicy, with each shrimp thoroughly coated.
