👩🍳 How to make Sardine Fry
- Marinate sardines (15 mins): Make paste with ginger-garlic paste, 1 tbsp Kashmiri chili powder, 1/2 tbsp coriander powder, 1/2 tsp turmeric, salt, and 1 tbsp lime juice with 1 tbsp water. Toss sardines in paste and let sit for 15 minutes.
- Heat oil (1 min, high heat): Heat coconut oil in large shallow pan until very hot and shimmering.
- Fry sardines (8 mins total, medium-high then medium heat): Carefully place sardines in hot oil without crowding. Fry for 3-4 minutes on first side without moving until golden and crispy. Flip and fry on other side for 3-4 minutes until fully cooked and crispy all over.
- Fry aromatics (2 mins, medium heat): Remove sardines to plate. In same oil, quickly fry onion slices for 1 minute until softened. Add curry leaves and green chilies, fry for 30 seconds.
- Plate and serve (1 min): Arrange sardines on plate. Top with fried onions, curry leaves, and green chilies. Drizzle remaining lime juice and remaining spice powder mixed with a pinch of salt.
