  1. Temper and mix (2 mins, high heat): Heat oil, crackle mustard and fenugreek seeds (30 seconds), add dried chilies, curry leaves. Pour over vegetables.
  2. Combine (8 mins, medium heat): Add cooked dal, sambar powder, tamarind paste, salt. Simmer until vegetables are completely tender. Visual: oil separates on surface.
  3. Finish (3 mins, low heat): Adjust consistency with water if needed. Sambar should coat spoon.
