👩🍳 How to make Puttu
- Mix dry ingredients (3 mins, room temperature): Combine 225g rice flour, 50g grated coconut, 5g salt in large bowl. Mix well with hands until even.
- Add water (3 mins, room temperature): Sprinkle 120ml water gradually, mixing with hands. Dough should be crumbly, like wet sand—not wet or clumpy.
- Layer puttu maker (5 mins, room temperature): Grease puttu mold (metal cylinder) generously with oil. Layer flour-coconut mixture and water alternately: 1 tbsp flour mixture, 1 tbsp water, repeat 4-5 times. Final layer should be flour mixture.
- Steam (8 mins, high heat): Place filled puttu maker in boiling water (water level should reach halfway up mold). Steam 8 minutes until cooked through. Test: wooden skewer inserted should come out clean.
