👩‍🍳 How to make Puttu

  1. Roast flour (2 mins, medium heat): Heat coconut oil, add rice flour, roast gently for 1-2 minutes, stirring constantly. Visual: flour becomes light golden, fragrant. Cool.
  2. Fry nuts (1 min, high heat): Fry cashew pieces in remaining oil until golden. Remove. Fry raisins 30 seconds. Remove.
  3. Prepare filling (1 min, no heat): Mix jaggery with 1/4 cup grated coconut and cardamom powder.
  4. Mix dough (2 mins, no heat): Mix roasted flour, salt, 1/4 cup water to form soft, moldable dough.
  5. Layer in mold (2 mins, no heat): Oil cylindrical puttu mold. Layer dough, jaggery filling, nuts, raisins alternately. Press gently.
  6. Steam (8 mins, medium-high heat): Place mold vertically in steamer, steam covered until cooked and skewer comes out clean. Visual: mold hot, steam stops.
  7. Remove (1 min, no heat): Push puttu out using plunger onto plate.
