  1. Prepare coconut paste (3 mins, no heat): Grind coconut, green chilies, cumin seeds to smooth paste. Add 2-3 tbsp water if needed.
  2. Temper oil (1 min, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves. Visual: seeds pop and turn golden.
