  1. Prepare prawns (3 mins, no heat): Pat prawns dry, coat with turmeric and salt. Rest 2 minutes.
  2. Prepare paste (2 mins, no heat): Mix green chilies, ginger, garlic, red chili powder, curry leaves, lemon juice.
  3. Coat prawns (1 min, no heat): Coat prawns with paste, rest 1 minute. Visual: prawns completely coated.
  4. Heat oil (1 min, high heat): Heat 1 tbsp coconut oil in large pan/griddle over medium-high heat until very hot.
  5. Fry prawns (6 mins, medium-high heat): Add coated prawns in single layer, do not crowd. Fry 2-3 minutes until pink and crispy. Visual: prawns turn from gray to pink, external coating browns.
  6. Flip and finish (3 mins, medium-high heat): Flip, fry 2-3 minutes more until both sides are pink and crispy. Visual: prawns curl, meat is opaque inside.
