👩‍🍳 How to make Prawn Biryani

  1. Marinate prawns (5 mins, no heat): Mix prawns with yogurt, 1/2 tbsp ginger-garlic paste, salt. Rest 5 minutes.
  2. Fry onions (6 mins, high heat): Heat 2 tbsp oil, fry onions until dark brown and crispy. Remove most, keep some in oil.
  3. Fry nuts (1 min, high heat): Fry cashews until golden. Fry raisins 30 seconds. Remove.
  4. Prepare rice (12 mins, high heat): Soak rice 30 minutes. Boil in 4 cups water with salt and whole spices until 70% cooked. Drain.
  5. Layer biryani (2 mins, no heat): In heavy pot, layer rice and prawn mixture. Top with reserved onions, nuts.
  6. Bake (15 mins, medium heat): Cover tightly with foil and lid. Cook on low heat 15 minutes. Do NOT open.
  7. Rest (5 mins, no heat): Rest covered 5 minutes.
