👩🍳 How to make Pathiri
- Prepare dough (5 mins, no heat): Mix rice flour, grated coconut, salt in bowl. Add 1 tbsp coconut oil. Gradually add warm water while stirring to form soft dough. Visual: dough should be soft and sticky but hold together, similar to chapati dough but slightly wetter.
- Rest dough (10 mins, no heat): Cover with wet cloth, rest 10 minutes. Visual: dough will hydrate, become more workable.
- Shape pathiri (10 mins, no heat): Divide dough into 8 equal portions. On oiled surface, flatten each portion into thin oval about 6 inches long and 3 inches wide. Visual: pathiri should be thin, even thickness throughout.
- Heat tawa (1 min, high heat 180°C): Heat flat griddle or tawa until very hot. Visual: water droplet should immediately sizzle on surface.
- Oil and complete cooking (1 min, medium heat 160°C): Apply 1/4 tsp coconut oil around edges while cooking other side until done. Visual: bread should be soft, flexible, with golden-brown spots.
