  1. Prepare spiced ghee (1 min, high heat 180°C): Heat ghee, add cumin seeds, let them sizzle. Visual: seeds darken slightly, fragrant aroma rises.
  2. Add aromatics (2 mins, medium heat 160°C): Add dried red chilies, let sizzle 20 seconds. Add curry leaves, then shallots and garlic. Visual: chilies darken, shallots turn crispy golden-brown.
  3. Combine (5 mins, medium heat 160°C): Pour entire tempering into cooked dal, stir well, add salt. Heat through. Visual: dal becomes glossy from ghee, oil separates slightly on top.
  4. Finish (2 mins, low heat 130°C): Remove from heat, cover. Let rest 2 minutes to set. Visual: golden color with glistening surface.
