  1. Heat oil (2 mins, high heat): Heat coconut oil in deep pan to 180°C. Test temperature with small piece of papadam—should sizzle and puff immediately. Visual: oil shimmers, smoke rises.
  2. Fry papadam (15 seconds, high heat): Drop papadam into hot oil. It will puff and expand within seconds. Visual: papadam expands, bubbles form.
  3. Flip immediately (10 seconds, high heat): Flip papadam, fry other side for 10 seconds. Visual: both sides light golden.
  4. Drain (1 min, no heat): Remove with slotted spoon, drain on paper towels. Visual: papadam becomes completely crispy, oil drains off.
  5. Cool (2 mins, no heat): Cool 2 minutes. Papadam becomes very crispy as it cools.
